"Carrot Cake" Bliss Balls
I don't know about you, but my eating patterns seem to bounce between eating really well and wanting to stuff my face with everything Bulk Barn has the audacity to tempt me with. When those cravings for simple sugars kick in, I like to try and find an alternative treat to satisfy my tooth that will help my body and goals, rather than hinder my progress *and my gut* My mom introduced me to these Bliss Balls shortly after I had Moose, and I found they were a great little snack to have between meals and breast feeding that didn't take a lot of time to make. They're nutrient dense -zinc, vitamin B-6, Calcium, Iron, Manganese, Niacin- and fibre rich, a few of these bad boys with your afternoon protein shake and you're ready to roll.
Ingredients
10 Medjool dates (pitted)
1/2 c unsweetened, shredded coconut
1/2 c chopped walnuts
1/2 c shredded carrot
1/4 c pumpkin seeds
1/4 c dried cranberries *can substitute for raisins*
2 tbsp chia seeds
1/2 tsp cinnamon
Place dates in food processor and pulse to a paste. Throw in everything else until it resembles a sticky dough. Roll into 1-inch balls and stick in fridge for 30 min. Keeps for 1 week in the fridge or 3 months in the freezer (if you don't eat them before then.)
